- Karen’s Spice Kitchen Butter Chicken Pack
- 2 Lbs. Joyce Farms Chicken Thighs or Breasts
- 1 Lb. sweet yellow onions
- 2 heads of garlic
- Tomato Paste (6 oz. can)
- 2 lemons
- Heavy Cream or Coconut milk
You will need:
- 2 Tbsps. butter or cooking oil of choice
- 1 to 2 Tbsps. sugar or honey
Instructions (will be included with order):
- Chop onions (2) and mince garlic (4 cloves). Chop chicken into bite size pieces. Juice one lemon and set aside.
- In a 4-5 quart pot, cook the chopped onions in butter or oil until translucent. Add the garlic and cook for one minute more.
- Turn down the heat and add the contents of the larger spice packet. Cook for another few seconds, stirring constantly.
- Add chicken pieces and mix until coated with onion/garlic/spice mixture.
- To prevent the dairy from curdling, turn off the heat and add 1 cup heavy cream, crushed tomatoes (2 cups) , tomato paste (3 Tbsps.), lemon juice (2 Tbsps.) and sweetener (1 to 2 Tbsps.). Mix together.
- Turn the heat back on to lowest heat and simmer for approximately 30 minutes, stirring occasionally. Thin sauce with water if necessary.
- Add smaller spice packet for additional heat.
Kitchen Notes:
Serve with Tidewater White Rice and roasted broccoli or a mixed green salad. Garnish with freshly chopped cilantro.
