Colfax Creek Farm sends their pork over to San Guiseppe for seasoning and curing, creating a great local partnership! Spanish chorizo is a cured, or hard, sausage made from coarsely chopped pork. The red color of Spanish chorizo is due to the heavy amounts of paprika in the spice mix. Depending on the type of paprika used, Spanish chorizo can be either spicy or sweet.
Colfax Creek Farm
Our family has been farming since 1901. We're proud to be farmers and we cherish the many relationships that farming creates. At Colfax Creek Farm, we work to balance the traditions and heritage of our past while influencing and inspiring future generations of farmers. The goals of creating a better food system, regenerating the land and soils that we farm, and reviving rural communities around us drive us to always become better farmers and stewards of our lands and animals.Today, Colfax Creek Farm is owned and operated across Polk and Rutherford county by Nicole and Aaron Bradley. At this farm, we raise the finest 100% grass-fed beef, pastured pork, and pasture raised poultry all while focusing on producing healthy foods, raising happy animals, and caring for our land.
