Ingredients: Pork shoulder with at least 20% fat (or ground pork), Kosher salt, Sugar, Fennel seeds, Black pepper, Garlic, Red pepper flakes (optional, for spicy sausage), Nutmeg, Oregano, Fennel pollen (optional), White wine, Parsley, Hog casings (optional, for linking the sausage)

Keep frozen until ready to eat. Thaw under refrigeration for 24-48 hours for best results.
